Sa place dans les m\u00e9dias traditionnels est de plus en plus au premier plan. Outre les \u00e9missions culinaires phares diffus\u00e9es par les cha\u00eenes g\u00e9n\u00e9ralistes, des stations de t\u00e9l\u00e9vision sont enti\u00e8rement consacr\u00e9es \u00e0 la communication culinaire. Les livres de cuisine constituent l\u2019un des secteurs les plus dynamiques de l\u2019\u00e9dition francophone, sans compter les magazines culinaires qui, malgr\u00e9 la crise des m\u00e9dias imprim\u00e9s, se multiplient \u00e0 proximit\u00e9 des caisses d\u2019\u00e9picerie.<\/p>\n<p>Les m\u00e9dias num\u00e9riques n\u2019\u00e9chappent pas \u00e0 l\u2019ubiquit\u00e9 de la communication alimentaire. On y trouve de tout et son contraire. La diffusion des contenus qui y sont publi\u00e9s est amplifi\u00e9e par le recours aux m\u00e9dias sociaux, y compris les blogues de nutritionnistes et d\u2019influenceuses ou influenceurs non professionnels. Instagram constitue notamment un m\u00e9dia social de choix pour le partage de photographies d\u2019aliments, \u00e0 des fins personnelles ou publicitaires. Les sites de notation comme TripAdvisor s\u2019ajoutent aux guides gastronomiques.<\/p>\n<p>La multiplication des sources d\u2019information et des contenus sur les aliments bouleverse les conceptions populaires du \u00ab&#160;bien manger&#160;\u00bb. Comment s\u2019est d\u00e9velopp\u00e9e cette fascination pour la culture culinaire non seulement dans les m\u00e9dias, mais aussi dans les mus\u00e9es, la litt\u00e9rature, les arts, etc.&#160;? Quelle place prennent respectivement le plaisir\/d\u00e9go\u00fbt, la sant\u00e9 et la commensalit\u00e9 dans les imaginaires de la table&#160;? En quoi l\u2019aliment reste-t-il li\u00e9 \u00e0 la construction de l\u2019identit\u00e9 dans la polys\u00e9mie du comestible&#160;? Quelles significations prend la nourriture dans une sph\u00e8re publique globalisante&#160;? Comment se confondent les discours publicitaires commerciaux et ceux valorisant les produits du terroir&#160;?
