Pour autant, cette offre se diffuse dans des socie\u0301te\u0301s aux cultures diffe\u0301rentes. Si comme le proposait Barthes (1961), on ouvre la notion de nourriture pour la concevoir comme un syste\u0300me de communication (De Iulio <em>et al.<\/em>, 2015&#160;; Hache-Bissette et Saillard, 2015), on doit s\u2019interroger sur les significations que reve\u0302t l\u2019aliment dans une e\u0301conomie mondialise\u0301e, en conside\u0301ration des bouleversements me\u0301diatiques actuels. Jusqu\u2019a\u0300 quel point les rapports dialogiques \u2014 de\u0301libe\u0301re\u0301s ou impose\u0301s \u2014 propres a\u0300 la \u00ab&#160;glocalisation&#160;\u00bb des pratiques culinaires transforment-ils non seulement comment on mange, mais aussi les ide\u0301ologies alimentaires (Jourdan et Riley, 2013&#160;; Strigler, 2019)&#160;? Dans ce contexte, nous souhaitons explorer les espaces de production des repre\u0301sentations et discours alimentaires. Quelle influence les diffe\u0301rents me\u0301dias exercent-ils au regard des transitions culturelles qui accompagnent les transitions alimentaires&#160;?<\/p>\n<p class=\"texte\">La communication alimentaire est souvent aborde\u0301e sous l\u2019angle des processus d\u2019influence (Londeix, 2015&#160;; Romeyer, 2015). Plusieurs de ces recherches portent sur les effets des publicite\u0301s de produits alimentaires industriels sur les jeunes. Nous souhaitons e\u0301largir ce questionnement a\u0300 d\u2019autres espaces sociaux et a\u0300 d\u2019autres strate\u0301gies d\u2019influence. Aujourd\u2019hui, de nombreux acteurs institutionnels, non institutionnels et marchands interviennent dans la constitution des repre\u0301sentations et des pratiques alimentaires (Berthoux et De Iulio, 2015). Ils ont des objectifs et une perception spe\u0301cifiques de la nourriture et de l\u2019alimentation, tandis qu\u2019ils utilisent diverses formes de communication pour influencer la consommation (Chen, 2019&#160;; Kearns et al., 2016). La publicite\u0301 de denre\u0301es alimentaires s\u2019insinue sur toutes les plateformes me\u0301diatiques et se fond aux contributions des internautes (Trudelle, 2018).<\/p>\n<p class=\"texte\">La nourriture est e\u0301galement sujet de communication. Les discussions en ligne autour de pratiques ou de syste\u0300mes particuliers de valeurs sont devenues des lieux privile\u0301gie\u0301s de construction de soi (Sneijder et Te Molder, 2009). Quels pans de l\u2019identite\u0301 personnelle s\u2019expriment dans les collectifs en ligne forme\u0301s autour de re\u0301gimes, de go\u00fbts ou de modes alimentaires (Abbar <em>et al.<\/em>, 2015&#160;; Casilli et Tubaro, 2016)&#160;? Ce que l\u2019on mange est aussi de\u0301fini par une myriade de productions culturelles professionnelles&#160;: e\u0301missions de te\u0301le\u0301vision, magazines et livres de cuisine, etc. (Boutaud, 2004&#160;; Cohen et Csergo, 2012) Jusqu\u2019a\u0300 quel point l\u2019industrie du spectacle culinaire conditionne-t-elle les habitudes alimentaires&#160;?<\/p>\n<p class=\"texte\">Bref, comment aujourd\u2019hui les personnes construisent-elles les ide\u0301es, les repre\u0301sentations et les pratiques qu\u2019elles ont entourant l\u2019alimentation, dans des espaces sociaux ou\u0300 circulent, a\u0300 diffe\u0301rents niveaux et dans diffe\u0301rents contextes, de multiples discours associe\u0301s a\u0300 la nourriture&#160;? Dans ce processus, quels ro\u0302les occupent diffe\u0301rentes formes de communication&#160;: macro et micro, commerciales et institutionnelles, prive\u0301es et publiques, locales et internationales, ou autres&#160;? Prolonger l\u2019analyse communicationnelle de ce phe\u0301nome\u0300ne a\u0300 mesure des transformations de l\u2019e\u0301cosyste\u0300me me\u0301diatique s\u2019ave\u0300re donc ne\u0301cessaire pour comprendre les entrecroisements des strate\u0301gies, des discours et des pratiques de communication, ainsi que les diffe\u0301rentes formes d\u2019appropriation par les personnes.<\/p>\n<h2>Axe 1 &#8211; L\u2019espace culturel<\/h2>\n<p class=\"texte\">On assiste a\u0300 une multiplication de l\u2019offre de contenus culturels en lien avec l\u2019alimentation. De la starisation des chefs a\u0300 la ve\u0301ne\u0301ration du produit, quelles significations donner a\u0300 la mise en sce\u0300ne des pratiques culinaires&#160;? Quelles sont les frontie\u0300res entre le journalisme culinaire et les blogues de <em>foodies<\/em> (Naulin, 2017)&#160;? Que faut-il aussi comprendre de la tendance a\u0300 \u00ab&#160;instagrammer&#160;\u00bb son assiette et des pratiques associe\u0301es a\u0300 la pornographie alimentaire (<em>foodporn<\/em>)&#160;? L\u2019alimentation e\u0301tant un mode d\u2019expression de soi, notre rapport a\u0300 l\u2019alimentation en dit beaucoup sur ce que nous sommes (Kaufmann, 2005). Que re\u0301ve\u0300le la mise en sce\u0300ne de nos pratiques alimentaires au sujet de notre mise en sce\u0300ne de soi plus globale&#160;? Comment sont e\u0301tudie\u0301es les repre\u0301sentations de la nourriture au regard de proble\u0300mes sociaux varie\u0301s comme l\u2019appropriation culturelle des traditions culinaires en contexte postcolonial, la reproduction des normes de genre associe\u0301es a\u0300 la pre\u0301paration des repas, l\u2019occultation de la souffrance des animaux d\u2019e\u0301levage\u2009&#160;?<\/p>\n<h2 class=\"texte\">Axe 2 &#8211; L\u2019espace marchand<\/h2>\n<p class=\"texte\">Une multitude de formes ont e\u0301te\u0301 invente\u0301es pour diffuser des contenus s\u2019e\u0301loignant de la publicite\u0301 traditionnelle&#160;: marketing de contenu, mise en re\u0301cit (<em>storytelling<\/em>), placement de produits, publicite\u0301 came\u0301le\u0301on (native), influenceurs et influenceuses, etc. Le style informatif des contenus et logos appose\u0301s sur les emballages camouflent le caracte\u0300re commercial du message. De telles pratiques conduisent les gouvernements a\u0300 re\u0301viser les re\u0301glementations et politiques en vigueur, ce qui donne lieu a\u0300 un de\u0301ploiement de strate\u0301gies de la part de l\u2019industrie pour assurer l\u2019alle\u0300gement du contro\u0302le e\u0301tatique (Vandenbrink <em>et al.<\/em>, 2020). Les enjeux relatifs a\u0300 la qualification de l\u2019information dans l\u2019alimentation, l\u2019un des plus gros marche\u0301s publicitaires mondiaux et un levier majeur de sante\u0301 publique, justifient des e\u0301tudes portant sur les motifs e\u0301voque\u0301s pour employer ces formats ambivalents, sur les formes que prennent effectivement les messages alimentaires et sur leur compre\u0301hension par les publics.<\/p>\n<h2 class=\"texte\">Axe 3&#160;: L\u2019espace sociosanitaire<\/h2>\n<p class=\"texte\">De nombreuses de\u0301marches visent a\u0300 la diffusion de saines habitudes alimentaires, sans toujours toutefois e\u0302tre fonde\u0301es sur des connaissances en communication (Kovacs et Orange-Ravachol, 2015). L\u2019appre\u0301hension du fait alimentaire comme un phe\u0301nome\u0300ne complexe de\u0301passant les seules pre\u0301conisations nutritionnelles invite a\u0300 interroger ces de\u0301marches ainsi que les manie\u0300res de les e\u0301valuer dans des optiques ne\u0301cessairement moins diffusionnistes. Par exemple, on e\u0301tudie l\u2019influence de messages centre\u0301s sur le plaisir (Trudel-Guy <em>et al.<\/em>, 2019), l\u2019apport de projets en litte\u0301ratie alimentaire (Vidgen et Gallegos, 2012&#160;; Azevedo <em>et al.<\/em>, 2019&#160;; Fernandez <em>et al.<\/em>, 2020), la contribution de formations visant a\u0300 de\u0301velopper des compe\u0301tences culinaires (Thomas et Irwin, 2011&#160;; Orliange, 2016&#160;; Thoer <em>et al.<\/em>, 2017&#160;; Bertrand <em>et al.<\/em>, 2018&#160;; Re\u0301gnier et Adamiec, 2019). L\u2019ethnographie est aussi mise a\u0300 contribution pour observer la ne\u0301gociation et la prise de de\u0301cision au moment de l\u2019achat d\u2019aliments (Gram, 2015&#160;; O\u2019Dougherty, 2006&#160;; Calderon <em>et al.,<\/em> 2016). Ce nume\u0301ro sera l\u2019occasion de rassembler ce type d\u2019e\u0301tudes qui, tout en prenant racine dans l\u2019espace sociosanitaire, enrichissent la re\u0301flexion critique sur les pratiques d\u2019influence normatives.<\/p>\n<p class=\"texte\">Ces trois axes ne sont pas restrictifs.
